We empower fishcake and surimi producers by sharing 40 years of Japanese innovation in protein science, process engineering, and quality control. Through hands-on training, cutting-edge R&D, and rigorous standards, we build local capabilities that drive consistent texture, authentic flavor, and sustainable growth.
I first became involved with Thailand in 1995.
Since then, I have had many opportunities to engage with this country, and today, I continue my work here.
For nearly 50 years, I have been involved in the production of surimi-based products, including kamaboko (Japanese fish cakes). Japan’s expertise in this field is world-class, and I began offering technical guidance and consulting overseas with the desire to share this knowledge with companies in need.
It all started when I was asked by a manufacturer of imitation crab machinery for advice on production methods.
Since then, I have received a wide range of requests—not only for improving production, but also for new product development, quality control, and more.
Standing on the production floor and working together through trial and error to create better products—
this is the part I love most, and it is what I will continue to pursue through new challenges.
Passing on Japanese surimi technology to the future, and to the world—
that is my life’s work.
Koichi Fukuda
March 1981: Graduated from Nagasaki University, Faculty of Fisheries (Major in Fish Protein Science; thesis on “Salt Reduction in Kamaboko”)
April 1981: Joined Kibun Foods Co., Ltd.; established the Quality Control department and served as Factory Manager overseeing kamaboko, chikuwa, and related products
April 1995: Seconded to Kibun Thailand Co., Ltd.; led quality control and product development, supplying Japanese-style processed fish products to local and export markets
April 2011: Appointed Senior Director of Operations at Lucky Union Foods Co., Ltd.; managed production, R&D, and quality assurance, including launch of a new fried fish line
November 2015: Became President of a joint-venture surimi plant in Ho Chi Minh City for Fujimitsu Co., Ltd.; led the setup of two factories producing crab-filled mochi pouches and kamaboko for domestic and export sales
July 2018: Contracted by Thai Union Public Company Ltd. as a surimi consultant; improved pollock sheet and bakery line operations
September 2019: Founded FishCake Consulting Co., Ltd.; has since provided technical consulting to 12 companies across 8 countries in the processed-fish industry
