UNIKANA: A Realistic Sea Urchin Alternative Made from Surimi Fishcake

We have created a realistic looking sea urchin using minced fish paste!

It took me two years to complete it using my own unique techniques, knowledge and know-how. The products name is “UNIKANA”.

This product has the following features:

It can be offered at a lower price than real sea urchin.
The appeal is that “you can easily enjoy the flavor of sea urchin.”

It is based on minced fish and recreates the creamy texture and richness of the dish.

It has excellent shelf life at room temperature or in the freezer, so you can use as much as you need.
It is easy to process and can be used in a wide variety of dishes, including sushi, pasta, gunkanmaki, and sauces.

The taste and quality of real sea urchin changes depending on the fishing conditions and season, but imitation products can provide a consistent flavor.
Because there is little variation in color and flavor, it is easy to use in the food service industry and for prepared foods.

It is also possible to promote “safety” by using preservatives and additives in a creative way.
